Ingredients
  1. 15 ounce can garbanzo beans (drained)
  2. 15 ounce can kidney beans (drained)
  3. 1 lemon (zested, juiced)
  4. 1 medium tomato (chopped)
  5. ¼ cup red onion (chopped)
  6. ½ cup parsley (chopped)
  7. 1 teaspoon capers (rinsed, drained)
  8. 3 tablespoon olive oil
  9. Salt
Instructions
  1. Mix together the kidney beans, garbanzo beans, tomato, capers, olive oil, salt, parsley, and lemon juice and zest in a large bowl and then cover.
  2. Allow to chill in the refrigerator for up to two hours before serving.
