Ingredients
  1. 6 slices bacon
  2. 1 (10 ounce) package of romaine lettuce (chopped)
  3. 1 cup diced fresh pineapple
  4. ½ diced tomatoes
  5. 3 green onions, chopped
  6. ¼ cup pineapple juice
  7. 3 tablespoon red wine vinegar
  8. ¼ cup olive oil
  9. ½ cup chopped and toasted almonds
  10. Pepper
  11. Salt
  12. ¼ cup flaked coconut (toasted)
Instructions
  1. In a large skillet, brown the bacon over medium-high heat. Drain the excess oils, and crumble into small pieces before setting aside for later.
  2. Use a container that can be closed to mix the red wine vinegar, oil, pepper, salt, and pineapple juice together. Close the container, shake well.
  3. In a large bowl, toss in the nuts, onions, crumbled bacon pieces, romaine lettuce, and pineapple. Add in the pineapple vinaigrette over the salad, coating well.
  4. Sprinkle the salad with the coconut flakes, and serve.
