Ingredients
  1. 1 eggplant (sliced)
  2. 1 onion (sliced)
  3. 1 red bell pepper (sliced)
  4. 1 zucchini (sliced)
  5. ¼ cup of fat-free Sun-dried tomato vinaigrette
  6. 16 ounce diced tomatoes (canned, low-sodium)
  7. 2 tablespoon parmesan cheese (grated)
  8. ½ cup shredded part-skim mozzarella cheese
Instructions
  1. Set oven to 350 degrees F.
  2. Using a cast-iron skillet or ovenproof pan, cook the eggplant, zucchini, red pepper, vinaigrette, and onion over high heat for about 10 minutes or until vegetables become tender.
  3. Reduce stovetop to medium heat; stir in the diced tomatoes (with the juice) and cook for 15 minutes, and then top sautéed vegetables with the mozzarella and parmesan cheese.
  4. Transfer skillet to oven and bake for about 15 minutes; serve and enjoy.
