A fast and easy way to make yummy chicken curry that is low in fat and high in protein. You can adapt this recipe to your own taste by lessening the curry, or you can add more if you want! It will go great with a side salad, or serve it on a bed of brown rice.

Ingredients
  1. 1lb chicken breast halves (skinless, boneless, cubed)
  2. 1 onion (chopped)
  3. 2 garlic cloves (thinly sliced)
  4. 1 cup tomatoes (chopped)
  5. 4 tablespoon mango chutney
  6. 2 tablespoon tomato puree
  7. 5 ounce water
  8. 2 tablespoon Curry powder
  9. 2 tablespoon olive oil
Instructions
  1. In a skillet, sauté the onion and garlic in the olive oil until mixture becomes golden brown; add in the cubed chicken and curry powder; cook for five minutes.
  2. Combine the mango chutney, water, tomatoes, and puree in with the skillet and simmer for 30 minutes.
