Ingredients
  1. 2 Zucchini (sliced)
  2. 2 Yellow Squash (sliced)
  3. 2 ½ Cup Vegetable broth
  4. 16 ounce baby-cut carrots
  5. 1 Red onion (sliced)
  6. 1 tablespoon olive oil
  7. 1 green pepper
  8. 1 red pepper
Instructions
  1. Heat up the olive oil over medium heat in a skillet or wok.
  2. Carefully add in the zucchini, peppers, squash, onion, and carrots and stir until vegetables are easily pierced with a fork.
  3. Add in the vegetable brother and stir-fry until mixture is heated thoroughly.
