Roast beef should be a staple on anyone’s dinner menu who is trying to shed some weight. This delicious cut is high in protein, low in fat, and packed with savory natural flavoring. The only seasoning recommended for this roast is a little cracked pepper.

Ingredients
  1. 2 ½ pound top round beef roast
  2. 1 tablespoon black pepper
Instructions
  1. Set oven to 400 degrees F. Meanwhile, let beef rest outside of the refrigerator for about 20 minutes.
  2. Dry the beef with a paper towel, removing any extra dampness, and then massage the pepper into the meat.
  3. Sear the cut on all sides in an ovenproof pan or cast-iron skillet on medium-high heat. No added grease needed. Transfer skillet or pan to the oven and reduce the temperature to 350 degrees F.
  4. Cook roast in skillet for about 50 minutes or until the internal temperature of the roast is at 125 degrees F; let stand for 10 minutes before serving.
