Low-fat Black Bean Soup
A very easy lunch of dinner option that is ready to eat in about ten minutes. This high-fiber soup features black beans and just enough salsa to give it a little kick, while remaining healthy and delicious!

- 2 cans Low-sodium Black beans (rinsed, drained)
- 1 cup salsa
- 2 cups chicken broth
- In a medium saucepan, mix the beans, salsa, and chicken broth together and cook for 10 minutes.
- Garnish with some green onions and a little feta cheese; serve immediately.
- For a cream-style soup, set the bean mixture into a food processor and blend until contents are creamy.
