Ingredients
  1. 1 large eggplant (peeled, sliced into 1/2inch rounds)
  2. 1 egg (beaten w/ ¼ cup water)
  3. ½ cup bread crumbs
  4. ½ cup parmesan cheese
  5. 1 tablespoon garlic powder
  6. 1 cup tomato sauce
  7. ½ cup mozzarella cheese (part skim)
Instructions
  1. Set oven to 450 degrees F.
  2. In a shallow bowl, combine breadcrumbs, garlic powder, and parmesan cheese.
  3. Coat eggplant rounds in the egg/water mixture and then coat in the breadcrumb mixture before placing each piece in a single layer on a greased baking sheet.
  4. Bake for 20 minutes or until eggplant becomes golden brown; flip pieces over halfway through the baking time.
  5. Drizzle cooked eggplant with tomato sauce and the cheese and then bake until cheese has melted.
