Coleslaw with Peppers

A little twist on the original coleslaw. It features peppers and celery to add in a little sweetness to the slaw. Use this as a side for your next summer BBQ to compliment your grilled chicken, shrimp or pork ribs.

Ingredients
  1. ½ Cabbage head (shredded)
  2. ½ Green pepper
  3. ½ Sweet Red pepper
  4. 1 Celery stalk (finely chopped)
  5. 2 tablespoons Cilantro (chopped)
  6. 2 tablespoons parsley
  7. ½ cup Mayonnaise
  8. 1 tablespoon White vinegar
  9. ¼ teaspoon onion powder
  10. Salt
  11. Pepper
Instructions
  1. To make the dressing: combine mayo, onion powder, salt, pepper, and vinegar in a bowl and mix well; set aside
  2. In a separate bowl, combine cabbage, peppers, cilantro, celery, and parsley; stirring ingredients together.
  3. Pour the slaw dressing over the cabbage mixture; stir well.
  4. Place in the refrigerator for an hour to chill before serving.
