Ingredients
  1. 2 onions (Finely chopped)
  2. 2 Garlic Cloves (Minced)
  3. 8 ounces Bacon (Chopped into small pieces)
  4. 1lb Chickpeas (pre-peeled, soaked for 10hrs)
  5. 3 carrots (grated)
  6. 2 tbsp Tomato Paste
  7. 1 bay leaf
  8. ½ cup Pearl Barley
  9. ¼ teaspoon Cayenne Pepper
  10. Salt
  11. Pepper
Instructions
  1. In a saucepan, cook the bacon, onion, and minced garlic until soft.
  2. Combine chickpeas, tomato paste, bay leaf, and carrots, seasonings, and 1 ½ quarts of water in with the garlic and bacon mixture.
  3. Cover and simmer contents on medium-low heat for about 30 minutes, and then gently add in the barley; cook for an additional hour.
